This 100% Cabernet Franc from a 0.8 hectare plot that is South East facing on a granite sub-soil. Yields are limited to 30 hl/ha to preserve the best of the grapes. Ageing takes place in old barrels and amphorae for 15 months, with no added sulphur! The work in the vineyard and in the winery takes place with the most profound respect for nature and the environment with a manual harvest and indigenous yeasts etc. The Mephisto nose is full and flattering with freshness and delicacy on aromas of black fruit and small red berries, currants, blackberries, strawberries, and some peppery notes. On the palate, it starts off fine and smooth, the tannins are a little tight but velvety. We find a nice flattering and fruity body, balanced between depth and a chiselled tension with subtle spices. This Cabernet can hold its own against the great Saumur reds! Warning: few bottles are marketed each year, but Vinatis allows you to access them.
