At Merayo, there is a fascinating balance between old and new. Eighty-year-old bush-trained Mencía vines provide fruit of remarkable character, while dynamic young winemaker Juan Merayo brings a modern touch in the cellar. With hand-harvesting, careful ferments, and judicious use of oak, Juan crafts expressive wines that reflect both tradition and innovation, showcasing the perfumed freshness and elegance of Bierzo’s terroir.
Winemaking
Fruit is handled gently from vineyard to winery. After a 24-hour cold maceration, fermentation takes place in stainless steel tanks at controlled temperatures of 15–17°C. The wine is aged sur lie for four months, enhancing texture and complexity. Tasting Note Pale, clear, and bright yellow, this Godello opens with an intense nose of green apple, stone fruit, citrus, and fennel. Mineral undertones add depth and freshness. On the palate, it is rounded and mouth-filling yet retains vibrancy, with notes of citrus and crisp apple. Lees ageing contributes a subtle creaminess and slight sweetness, delivering balance and harmony to the finish. Viticulture Merayo’s vineyards feature ancient bush vines rooted in clay soils topped with surface pebbles at an altitude of around 600 metres.
