Winemaking

Though made from an ancient variety, Carignan, the vinification is thoroughly modern. The grapes are destemmed and crushed before fermentation at a controlled temperature of around 23°C. Ageing takes place in tank, with a touch of French oak staves adding complexity and roundness.
