Sourced from plots situated on clay and flint soils, among the finest in the Loire Valley, L'Évanescente draws from this terroir a natural balance between freshness, tension and maturity. Produced using the traditional method, this cuvée undergoes a second fermentation in the bottle, followed by 24 months' ageing on the lees. This extended period creates fine, integrated bubbles, whilst adding aromatic complexity. The dosage, deliberately understated, allows the wine's purity to shine through. A precise and elegant nose opens with notes of dried fruit, apple and quince, accompanied by subtle pastry-like nuances. On the palate, the texture is delicate, underpinned by a mineral backbone and a structuring freshness. The fine, regular bubbles prolong a sensation of balance and clarity.
