Nyetimber Cuvée Chérie Demi-Sec is a delicately effervescent English sparkling wine made exclusively from estate-grown Chardonnay. Cultivated in vineyards with chalky and sandy soils on the north side of the South Downs, the grapes benefit from a long hang time that enhances flavour complexity. After careful pressing and fermentation, the wine undergoes five years on lees in the traditional method before disgorgement and a dosage of 44g/l, producing a rich yet balanced sparkling wine.

Founded in 1988, Nyetimber is a pioneering English sparkling wine estate committed to producing Grande Marque-quality wines exclusively from Chardonnay, Pinot Noir, and Meunier. Owner Eric Heerema and Head Winemaker Cherie Spriggs focus on estate-grown fruit and meticulous winemaking to reflect the unique terroir of Sussex.
Production
Grapes are hand-harvested and pressed in computer-controlled Coquard presses to optimise juice extraction. Each vineyard section is kept separate during fermentation in stainless steel tanks. After blending, secondary fermentation takes place in bottle, followed by five years of lees ageing and at least six months in bottle post-disgorgement.
Tasting Notes
Light golden in colour, with aromas of brioche, baked apple, Acacia honey, and a hint of tangerine peel. The palate shows lemon curd richness, balanced by crisp acidity and a clean, pure structure.
