Certified organic, this 100% Chardonnay is a blend of sites from Vertus, Le Mesnil, Villeneuve, Le Mont Aime´, Bassuet and Bas-su. Fermentation in cuve, full malolactic with 2 g/L dosage. A vivid, crisp and laser-focused blanc de blancs with aromas of warm apples, baked pears and pastry spices. Medium-bodied with fine bubbles. Lively and full of verve, with a comforting texture and a delicious finish. Disgorged in July 2024 with a dosage of three grams per liter, Doquet's NV Blanc de Blancs Champs Libres is produced from purchased fruit alongside the final pressings of estate-grown grapes and vinified in enameled steel. It reveals an aromatic bouquet of white flowers, orange peel and nougat, mingled with delicate pastry notes. Medium-bodied, fleshy and textural, the wine is underpinned by a sweet core of fruit and succulent acidity, culminating in a moderately persistent finish.
