Chambertin Clos de Bèze is one of Burgundy's great wines. Ripe, fleshy, full-flavored, and intense, the wine offers complex aromas of black cherry, violets, and exotic spices layered with earthy undertones and a hint of oak. The palate is dense and structured, with velvety tannins and a long, harmonious finish. The wine was completely de-stemmed, fermented with indigenous yeasts, and aged in 80% new Burgundian pièce.Pairs beautifully with dry-aged ribeye or duck breast with a cherry reduction, enhancing its richness and layered complexity. There's a hint of game bird in the aroma, while decaying fruit, wood smoke and tomato leaf notes complement the cherry and spice flavors in this multifaceted red.
