Rosé wines from the Minervois appellation account for just 13% of production, so it's fair to say they're relatively niche. The Pok Pok cuvée comes from vines nestled at an altitude of 300 metres amidst forests and garrigue, lending the wine freshness and character. The grapes were harvested by hand, and fermentation took place using natural (indigenous) yeasts, resulting in a very pure profile that stands apart from standardised rosés; very little sulphite is added. Pale pink in colour, this wine is floral and elegant, with lovely finesse and a long finish.
