For several decades, Maison Valette has been charting a unique course in Burgundy, bucking standardised practices. Here, time is an integral part of the winemaking process: long ageing, late bottling and complete freedom in crafting the cuvées. This Pouilly-Fuissé perfectly illustrates this unconventional approach with a blend of the 2020, 2021, 2022 and 2023 vintages. A rare choice within the appellation, designed not to smooth out the wine, but to reveal different dimensions of Chardonnay: the depth of sunny years, the tension of cooler vintages and the complexity brought about by the slow evolution of the ageing process. Old vines and low yields yield a dense, concentrated structure, whilst extended ageing allows the wine to gain in precision and natural stability. Maison Valette seeks, above all, the vibrant expression of the terroir, with wines crafted to evolve slowly over time. The result is a particularly deep and nuanced Pouilly-Fuissé, where notes of ripe fruit, candied citrus, white flowers and spices mingle with a taut mineral backbone.
