Proverbio Prosecco DOC Extra Dry Organic is a lively and refreshing sparkling wine from the Veneto region of Italy. With fine, persistent bubbles and a classic Prosecco aromatic nose, this wine is very soft on the palate, offering refreshing acidity with fruity flavours of apple, apricot and a hint of banana. Certified organic and crafted with care, it's perfect for celebrations or as an everyday treat. Also available in 75cl bottles here.

Winemaker Stefano Chioccioli produces certified organic Prosecco from vineyards situated on gentle hillside slopes in the Treviso province, at an altitude of 250 metres. The estate is committed to organic viticulture and sustainable winemaking practices.

Production

The grapes are destemmed and very gently pressed in a pneumatic press. Prior to fermentation the juice is chilled to allow natural sedimentation. The fermentation takes place in temperature-controlled conditions not exceeding 18°C in stainless steel tanks, where selected yeasts are added together with organic brown sugar. After approximately 30-40 days, when the desired pressure and sugar level are reached, the fermentation stops. The wine is then simply filtered and bottled.
