This Quincy comes from Sauvignon Blanc vines planted on an ancient geological terrace of the Cher. A terroir consisting of sand and gravel so-called light' soils that warm up quickly. After ageing for 56 months on fine lees, the wine is bottled in the spring. Fruity and aromatic, this Quincy develops aromas of white flowers and citrus, supported on the palate by lovely minerality and great freshness. The fruit triumphs with panache over its fine, elegant structure. Mineral and straightforward, this Quincy is round on the palate with lovely balance, developed fruit and aromas, underpinned by a fine, elegant structure. The flavour profile of this wine is beautifully complemented by smoked river fish or fish prepared in sauce.
