Production

100% Tinta del País (Tempranillo) grapes are sourced from multiple plots near Fuentecén at 900m altitude. The soils combine stone, clay, and white limestone, and vines are over 25 years old. Grapes undergo careful vineyard selection, favouring high and cool sites with slower ripening. Pre-fermentation maceration occurs at 10ºC for 3 days, followed by 18 days of alcoholic fermentation at 22-26ºC with daily pumping over and down. Malolactic fermentation takes place in both tank and barrel. The wine matures for 12 months in 70% French and 30% American oak, with 25-30% new barrels and the remainder 2nd to 4th use.
