Rippa Dorii is an Ontañón Family project, producing wines from two of Spain’s most important regions with a focus on quality, precision, and terroir expression.

Production

Tinta del Pais (Tempranillo) grapes are sourced from the Salomón vineyard, less than 4 hectares near Fuentecén. The Riaza river moderates the climate, softening harsh winters and cooling the hot summer days, creating a unique microclimate. The old goblet-trained vines (40+ years) grow in predominantly limestone soils with some clay and sand. Grapes are hand-harvested with an initial vineyard selection. Fermentation begins with a subtle cold maceration at 8–10°C for 4 days, followed by 19 days of fermentation with native yeasts and daily gentle pressing. Malolactic fermentation and 11 months of maturation occur in 100% Iberian oak barrels with bi-weekly punch-downs, producing a wine with integrated oak and polished tannins.

Tasting Notes

Intense aromas of ripe black fruit, black olive tapenade, tobacco, and subtle floral and mint notes. The palate is pure and complex, with cassis, forest fruit, and balsamic layers.
