In the heart of Saint-Aubin, this Premier Cru lies at the foot of the Château, nestled in a valley that gives it a particularly favourable microclimate. The colluvial soils, which are perfectly well-drained, combined with a south-facing aspect and vines planted in the 1980s and 1990s, produce a wine of great precision, distinctly marked by its terroir. This Clos du Château stands out for its style that is both refined and taut, with a clearly defined minerality. On the palate, it offers a remarkable balance between freshness and roundness, revealing notes of candied citrus and dried fruit, with a delicately enveloping texture. A wine that is both structured and elegant, true to the high standards of the great terroirs of Saint-Aubin. Food and wine pairings: Ideal with delicate poultry (duck, guinea fowl, turkey), grilled or roasted fish, and mild cheeses such as Brie, Camembert or Comté. It pairs particularly well with grilled turbot with citrus zest. Vinification and ageing: Whole-bunch pressing, precise settling, followed by fermentation and ageing in oak barrels for 12 months, 30% of which are lightly toasted new barrels, adding complexity and elegance.
