Production
Grapes are hand-picked in small 15kg containers at the end of September to preserve their integrity. After chilling overnight at 6–8°C, the grapes are gently destemmed and lightly crushed. Fermentation occurs at 18–22°C over 10–12 days, followed by natural malolactic fermentation. After fermentation, the wine is aged on fine lees in stainless steel tanks for four to six months with regular stirring (bâtonnage), enhancing texture and complexity while maintaining freshness and vibrant fruit expression.
