Santiago Ruiz continues the pioneering spirit of his grandfather Ángel Ruiz, who was among the first to bottle wines in the region and introduced modern winemaking practices including stainless steel tanks. Vineyard & Production
Grapes are sourced from 38 hectares of sustainably farmed vineyards in Tomiño, the southernmost sub-region of Rías Baixas, where cooling Atlantic breezes, the moderating influence of the Miño River, and sandy soils over granite bedrock contribute aromatic richness and characteristic wet-stone minerality. Harvested by hand in 20kg crates with careful sorting on arrival, each variety undergoes cryo-maceration and fermentation in temperature-controlled stainless steel tanks, followed by a short period on lees before careful blending to produce the final wine.
