' Schloss Johannisberg is a legendary winery and producer of some of the world's finest and most highly regarded Riesling wines, thanks to over 900 years of winemaking history. Silberlack (Silver Seal) is one of the finest dry white Rieslings in Germany. Grapes for the wine were handpicked from vineyards surrounding the Schloss itself where the soli is Taunus quartzite with an overlay of fertile loam and a layer of loess, as well as a small amount of iron dioxide, which gives the soil a reddish colour. Fermentation took place in 1,200 litre old oak barrels from Schloss Johannisberg oak, lasting for six weeks. The wine was then left on its fine yeast lees until bottling to add complexity and weight to the wine. Serve with fish, seafood, wild fowl & smoked Monkfish roasted in herbs, Mediterranean grilled vegetables or wild garlic gnocchi. '
