The Spumante Brut Nerello Mascalese Vinificato in Bianco ‘Valdemone' combines effervescence with Nerello Mascalese, Sicily's finest red grape variety. A bold choice, reflecting the spirit of the Tornatore family estate, owners of one of the largest private vineyards on Mount Etna (currently converting to organic farming). Situated on the northern slope of the volcano, the vines—which benefit from a unique microclimate and are trained using the cordon system in the Castiglione area—are harvested by hand, and the grapes are pressed whole-bunch. The sparkling wine is produced in steel tanks using the Charmat method, where the wine ages for four months. On tasting, this ‘blanc de noir' sparkling wine displays a fine, persistent effervescence and aromas of flowers and white fruits, with notes of blackcurrant and pink grapefruit. The palate, fresh and dry, reveals a pleasant hint of salinity and a good length on the finish.
