Aged for 40 moons (approximately 40 months), Nicola Gatta's Quattrocento Extra Brut allows the natural flavour of the limestone soils of Gussago, on the edge of Franciacorta, to express itself fully. Produced using traditional methods in accordance with biodynamic principles, this cuvée of quality and character is vinified using the traditional method, primarily from the 2021 harvest and a small amount of reserve wine aged in barrels. Fermentation takes place spontaneously in barrels, and only 3 g/L of raw cane sugar is added, contributing to the freshness of the finish. The nose, clean and intense, sets the tone: vinified as a white wine, the Pinot Noir (30 per cent) brings out the red berries, whilst the Chardonnay gives way to a subtle aroma of stone fruit and citrus, with crisp and floral nuances. The palate follows, mineral, explosive and linear, underpinned by a hint of dryness and a fine, creamy mousse, creating a wine that is both complex and remarkably transparent. A unique Spumante that tells a story of passion and terroir.
