Nicola Gatta's Cuvée Nature is the perfect introduction to the passion and precision of this biodynamic artisan winemaker. From his 6 hectares of vineyards on the limestone slopes of Gussago, on the outskirts of Franciacorta, come delicate sparkling wines with a vibrant minerality, reminiscent of Champagne crus. For this ‘entry-level' cuvée, Nicola blends 80 per cent Chardonnay with 20 per cent Pinot Noir, vinified using the Metodo Classico with a second fermentation in the bottle, carried out exclusively by spontaneous fermentation, without the addition of sulphites, or any filtering, clarification or sugar at the time of disgorging. As for ageing: 30 lunar cycles on the lees (approximately 30 months), which is the minimum ageing period for Nicola's wines. On tasting, this exceptional sparkling wine displays dominant notes of citrus and broom, underpinned by a pronounced mineral structure. The fine, airy bubbles support the fruity and tangy nuances, resulting in a lingering and perfectly balanced mouthfeel. A crisp, dry sparkling wine of great elegance.
