The winemaker has created a cuvée with character, with a dark colour with purple highlights and a powerful nose, still marked by long ageing in oak barrels. The palate is rich and expressive, combining notes of toast, broom flowers, red fruit and sometimes chocolate, prolonged by a fresh, minty finish with hints of eucalyptus. This is a demanding wine that does not reveal itself immediately and deserves a few years of ageing to reveal the full complexity of its terroir. With time, it will develop deep aromas of black olives, blackberry jam, bramble and undergrowth, enhanced by pepper and thyme. The velvety tannins of the Syrah and the mentholated finish of the Mourvèdre then envelop the palate with elegance. A great cuvée from a selection of plots on scree and marl soils, it is ideal with a rib of beef, leg of lamb with prunes, rabbit with olives, gardiane de taureau (bull stew) or mature cheeses.
