The Valdobbiadene Prosecco DOCG 'Cuvée di Boj' is one of Valdo's flagship wines, named in homage to French cuvées and the Valle dei Boj in San Pietro di Barbozza, a village at the heart of the Prosecco appellation. First produced in 1982, this iconic cuvée is the first Valdobbiadene from the great Venetian family estate, produced with a Brut dosage. Made exclusively from the Gléra grape variety THE Prosecco grape and produced using the CharmatMartinotti method, it is aged on its lees in an autoclave for five months. It boasts an intense aromatic bouquet, with floral nuances and fruity notes: apple, jasmine and thyme. On the palate, it is fresh, expressive and persistent, carried by a lively acidity balanced by a slight sweetness. The fine bubbles and the clean, delicate finish make it perfect with appetisers, seafood or a cheese platter featuring creamy, medium-aged or even smoked cheeses.
