Meet the Producer

Founded in 1864 by Pierre Bourée, Vallet Frères is now run by the fourth generation, Jean-Christophe Vallet. The estate is renowned for crafting terroir-driven Burgundies with precision, respect for tradition, and sustainable viticulture practices.

Production

Vines are sustainably managed and trained using Guyot pruning. Grapes are hand-harvested, sorted, and partially de-stemmed (up to 25%) before fermentation with native yeasts in open wooden vats alongside whole clusters. Gentle daily pump-overs extract flavour and colour over a 20-day fermentation. The wine is then aged for 16–20 months on fine lees in oak barrels, enhancing complexity and texture.
