What's more, Vendange Entière has become one of the best red Sancerres in history. It's a real accomplishment in wine making to exalt the Pinot Noir. Far from modern wine making techniques, making wine from a whole harvest demands perfect, healthy and fine grapes - and that are full of flavour - from the vine. The destemmed harvest is then put into tapered wooden vats so that cold maceration can take place. For this wine no new barrels are used, but ageing of 18 months is required to produce this high-quality red wine. The pleasure is then in the glass. The magic of Pinot Noir, a unique tasting moment, awakens the taste buds. Superlatives abound in describing this almost divine bottle. A great wine that's certainly still too young, but will transport you to a wonderland in the near future.
