Meet the Producer
Perched on the dramatic slopes above Franschhoek, Wildeberg is a tiny, hands-on winery producing limited quantities of Cap Classique, reflecting the rugged terroir and meticulous craftsmanship of the Cape.
Production
100% Chardonnay grapes are whole-bunch pressed and naturally settled for 48 hours. Fermented in old 600-litre French oak barrels and barrel-aged for 4 months before bottling for the second fermentation. The wine spends a minimum of 12 months on its lees and is disgorged without dosage, resulting in a Brut Nature style.
