Wine & Soul is a Portuguese winery located in the Douro Valley, founded by winemakers Sandra Tavares da Silva and Jorge Serôdio Borges. In the late 1990s, the couple decided to purchase old vineyards in the Vale do Pinhão. Their first wine was made in 2001, and since then, the company has gained popularity thanks to its excellent wines produced in limited quantities that reflect the character and winemaking tradition of the Douro. In 2007, the company also began producing olive oil. Wine & Soul extra virgin olive oil is a blend of the native Cobrançosa, Madural, and Verdeal varieties, produced from organically grown olive trees over 80 years old that surround the vineyards. After the manual harvest in late October, the oil is gently cold-extracted to ensure the full expression of the aromas. This elegant organic extra virgin olive oil has a balanced and refined character and a broad aromatic profile revealing notes of apple, green banana, and walnut, followed by herbaceous hints. On the palate, it is fresh and delicately pungent, with peppery notes and a slightly bitter finish. It's the ideal oil for dressing mixed salads and marinating grilled vegetables. It's also excellent with bruschetta and poultry, or as a finishing touch on pasta.
