The estate emphasizes an artisanal approach to winemaking, utilizing organic and biodynamic cultivation methods, as well as traditional techniques. The Gamay grapes are sourced from a small plot planted in 1903 on manganese-rich pink and black granite soils with loose rock and quartz notes. After manual harvesting and attentive vinification with low-temperature carbonic maceration, the finished wine rests in foudres for one year before bottling according to the lunar calendar.
