Zyme was founded by Celestino Gaspari in his garage after the talented winemaker decided to pursue his dream of making his own wine after helping to found over a dozen wineries in the Veneto in his role as a consultant winemaker. Born into a family of farmers, Celestino initially worked with livestock before falling in love with winemaking. For years he worked with legendary Italian winemaker Giuseppe Quintarelli where he learned from the master how to make traditional Veneto wines like Amarone and Valpolicella. When he began his own project, Zyme, Celestino decided to explore a more experimental approach to winemaking which has drawn admiration from wine critics and enthusiasts all over the globe. Celestino’s charming Bordeaux blend is named after the proportions of each grape variety in the composition; 60% Cabernet Sauvignon, 20% Cabernet Franc, and 20% Merlot. The nose opens with evocative aromas of cassis, black cherry, sweet spices and licorice, while the first sip reveals a bold flavour profile with intense dark berry notes, a firm structure, full body, and well-defined tannins. This is a wine that can be cellared for several years and is also ready to be enjoyed now alongside a hearty beef bourguignon or prime steak served with fries.
