Boutinot's hilltop vineyards, including the renowned La Pauline and Les Six Terrasses sites, benefit from classic argilo-calcaire soils of limestone pebbles over clay, creating wines with remarkable finesse and structure. Old bush vines are hand-harvested, vinified with only natural yeasts, and undergo a long cuvaison period with gentle remontage and manual pigeage. Tasting Notes

Rich, savoury, and meaty on the nose, with intense morello cherry fruit and a touch of spice. The palate delivers ripe berry, liquorice, and a hint of cinnamon, full-flavoured and smooth with supple tannins and a finely-grained texture that speaks of the terroir.
