Vineyard and Production Each soil type and aspect of the Sauvignon Blanc vineyards is carefully matched with different clones to capture the full range of flavours the variety can express. Blocks are vinified separately using reductive practices and selected yeasts to preserve freshness and aromatic intensity. A small addition of Semillon enhances mid-palate weight and complexity, while lees stirring adds the unmistakable texture that is a hallmark of the Iona style.
