Passitivo Primitivo Organic Appassimento is a rich and expressive wine from southern Puglia, crafted from carefully selected Primitivo grapes. Deep ruby in colour, it opens with ripe cherry and black cherry aromas, complemented by spicy notes and hints of coconut and chocolate. The palate is well-structured and smooth, with elegant tannins and a lingering finish of forest fruits. Why You'll Love It This is organic Appassimento winemaking at its finest. Production Primitivo grapes are hand-harvested from clay-rich soils in the Brindisi province using the "Alberello Basso" bush vine training method. A pre-harvest drying technique, "Il giro del Picciolo," chokes the stems to naturally dehydrate the berries for 12 days, concentrating aromas and sugars. After destemming and gentle crushing, fermentation takes place at 22–25°C for 8–10 days with frequent pumping over and délestage to enhance colour, aroma, and soft tannins.
