Hailing from the renowned terroir of Pernand-Vergelesses, the 2023 Pernand-Vergelesses ‘Les Combottes' from Domaine Rapet Père & Fils perfectly embodies the elegance of great Burgundy whites. Made from Chardonnay, this wine comes from vines planted in the early 2000s on steep south-west facing slopes. The ‘Les Plantes des Champs et Combottes' vineyard, with its white, marly and light soils, imparts finesse and mineral tension. The name ‘Combottes', derived from ‘combe', evokes the undulating terrain of the plot. The winemaking process prioritises precision: harvesting into small crates, whole-bunch pressing for around two hours, followed by cold settling for 24 hours. Fermentation takes place in oak barrels (30% new wood), followed by ageing on lees with stirring until summer, before bottling after 12 months. On tasting, the golden colour heralds a delicate nose blending fresh fruit, spicy notes, hints of honey and flint upon maturity. The palate, lively and elegant, offers lovely freshness and a harmonious finish. Best enjoyed between 10 and 12°C, within 3 to 5 years, paired with shellfish, delicate fish or characterful cheeses such as Bleu de Bresse.
