Its name is inspired by the wild thyme bushes that line the Ionian shore, reflecting a beautiful, terroir-driven character that brings the spirit of the Mediterranean straight to the glass. A gentle pressing follows, with fermentation taking place in stainless steel tanks at a cool 15 degrees Celsius. The wine is then matured entirely in stainless steel for five months, preserving its pristine freshness, varietal purity, and elegant mineral edge.
