Waterford Ballykilcavan Edition 1.1 is the inaugural release of this single farm origin Irish single malt whisky, made exclusively from barley grown at Ballykilcavan by David Walsh-Kemmis west of the River Barrow in County Laois. This is the whisky that started the Ballykilcavan terroir exploration — Edition 1.2 followed with three additional months of maturation. Production Record Barley harvested: 17 August 2015. Distilled: 8th week of 2016. Maturation: 3 years, 11 months, 18 days. Bottled: June 2020. ABV: 50%. Why You'll Love It Waterford's Single Farm Origin series is one of the most intellectually rigorous and genuinely exciting projects in world whisky. The philosophy is straightforward but radical: barley is the source of single malt's complex flavours, and those flavours are shaped by the place where the barley grows, by the soils that nourish its roots, by the microclimate in which it ripens. Ballykilcavan Edition 1.1 is the original expression of that farm, that harvest, that terroir — a precise and unrepeatable record of a single place in time. Bottled at cask strength, 50% ABV. Distillery and Production Waterford Distillery, Waterford, Ireland. Single farm origin Irish single malt whisky. 100% barley grown by David Walsh-Kemmis, Ballykilcavan Farm, County Laois.
