Vineyard and Production Pinot Noir grapes are gently pressed for up to two hours to extract the jus de presse, which is then vinified and blended to achieve the wine's delicate colour and vibrant character. Extended lees ageing of at least 22 months ensures full integration of flavours and a creamy, persistent mousse before disgorgement and release.
