With vines averaging 40 years old and the oldest dating back to 1930, the estate's north-west facing slopes, coastal proximity and shelter from the Mediterranean sun create a unique microclimate, aided by cooling Mistral winds. Harvest is both mechanical and manual, carried out in the early morning to preserve freshness. Grapes undergo cold maceration on the skins before pressing, with free-run juice fermented at low temperatures. The wine spends three weeks on its lees with regular batonnage to enhance aromatic complexity. Malolactic fermentation is avoided to preserve vibrant acidity. Tasting Notes.
