The Mentors series highlights the winery's finest varietals, crafted with precision and care to achieve expressive and structured wines. Production Grapes are hand-harvested at optimal ripeness and meticulously sorted in the cellar. After two days of cold maceration, the juice is inoculated with a selected yeast strain. Fermentation lasts approximately six days, with regular pump-overs to extract colour, flavour, and structure. The wine is racked off the skins, settled, and transferred to barrels for malolactic fermentation. The wine is aged for 18 months in French oak barrels, 70% of which are first-fill. During this period, the wine is carefully racked twice to ensure clarity and balance, producing a polished and harmonious finish.
