Vineyard & Production

Frappato grapes are harvested at optimal ripeness and undergo slow fermentation in stainless steel tanks to retain their vibrant freshness. The Nero d'Avola grapes are left to wither slightly on the vine in passimento style, concentrating their flavours and sugars before hand-harvesting and gentle pressing. Fermentation is carefully controlled at low temperatures, with natural sweetness achieved by halting fermentation through temperature control. The wine then matures in steel tanks to preserve its fresh, fruity profile.
