Viticulture The soils vary considerably, adding complexity to the wine: brown and red soils on silts, loam rocks from the Cretaceous period, compact red soils on basalt, and compact red soils on Eocene limestone. Each valley imparts different qualities, though all have high calcareous content with many large stones in the top half metre of soil.

Winemaking

Ripe, healthy grapes are hand-selected. The thinnest bunches are chosen for optimal air circulation and laid in perforated plastic boxes to ensure ventilation. The grapes are stacked in the fruttaio, a large airy room, and carefully monitored during the Appassimento drying process.
