Grapes are harvested carefully by hand and machine in the early morning from 15-year-old vines in Weinviertel, grown on a mix of loess, clay, and granite soils at 230–300 metres above sea level on south-facing terraces. No malolactic fermentation is carried out, preserving the variety's characteristic freshness and acidity, with eight weeks on the lees adding texture and complexity.
